CARROT CAKE COOKIES
“I had a hankering for carrot cake and these cookies fit the bill. A sandwich cookie named after a veggie based desert. Almost sounds healthy. Almost. Enjoy!”
½ cup Butter
1/3 cup, plus 2 Tablespoons, Sugar
1/3 cup, plus 2 Tablespoons, Brown Sugar
1 Egg
½ teaspoon Vanilla Extract
1¼ cups Flour
1 teaspoon Cinnamon
½ teaspoon Baking Soda
½ teaspoon Salt
1 cup Grated Carrots
½ cup Raisins
8 ounces Cream Cheese, softened
¼ cup Honey
Preheat oven to 375 degrees.
Cream the butter, sugar, and brown sugar.
Mix in the egg and vanilla extract.
Mix in the flour, cinnamon, baking soda, and salt.
Mix in the carrots and raisins.
Drop Tablespoon sized balls of dough onto a parchment paper lined baking sheet.
Bake for 10 minutes or until lightly browned.
Cool for 1 minute on baking sheets and remove to wire racks to cool completely.
Mix together the cream cheese and honey until smooth.
Take two cooled cookies and place a teaspoon of the cream cheese mixture in the middle to form a cookie sandwich.
Makes about 16 cookies.
